Foo came together as the combined vision of owners Sterling Grice and Patrick Lynch. Both Lynch and Grice spent time living and working in Asia. Throughout their travels they gained first hand knowledge of the Asian food experience. It was the street stall food culture that left the most profound impression on them.
Drawing on influences from throughout Asia, Foo is a tribute to the Asian street stall food culture.
CHEF ~ PATRICK LYNCH
Chef Patrick Lynch began his cooking career at Le Cordon Blue in London, England where he completed a Grande diplome as well as gained work experience at Clairidges hotel and the Sugar Club restaurant.
After completing culinary school Patrick worked in Australia, New Zealand and South East Asia. During his time spent travelling in South East Asia, Patrick spent his time as a stagiare in many restaurants trading knowledge with cooks from throughout the region. This eventually led to a stint as the chef of the Australian Embassy in Phnom Penh, Cambodia.
Upon returning to Canada, Patrick went to Vancouver where he helped open Wild Rice as a sous chef before spending five years as the chef at Monsoon East West Brasserie. Patrick relocated to Victoria in ’06 to open Sanuk restaurant at the Magnolia hotel as the Executive Chef before moving on to open Foo as chef/ owner.
